Toosie’s Gluten Free – MTN Town Biz Review
So let me begin the review by stating:
a.) I am not a very good baker and b.) I only have intolerance’s to rude people.
I met Jim Curcio recently at a party, he brought a delicious Peach Pie with a gluten free crust to share with the crowd, I was intrigued. I have many friends who are discovering that they are unable to eat products with gluten so I wanted to know more about what he used to produce this delicious pastry. I discovered that not only did his wife bake this wonderful treat but she also created the mix from a line of gluten free products they created- Toosie’s Gluten Free.
Previous owners of Kula’s Cafe in Dillon, a terrific bakery and restaurant, Jim and Deby Curcio are celebrating their 8th season of living in the mountains and have been build their business producing a variety of gluten free products for a little over a year now. Gluten Free All-Purpose Flour, Gluten Free Bread Mix, Gluten Free Brownie Mix, Gluten Free Waffle & Pancake Mix and Gluten Free Chocolate Cake Mix. Jim happened to have a case of the cake mix in his car and offered me a box to try at home.
I found a special occasion to whip this cake up and found (baking, again not my forte, especially at altitude) the mix was really simple. Even better, I did not need to adjust for altitude – whew! Out came the pans, mixer and additional ingredients: eggs, butter and hot water – that’s it!
Bake at 350 degrees F. and I had two perfect – seriously, I mean PERFECT round cakes. In the history of baking in my 9,984 ft kitchen I have never had a perfect cake! This was cool. On went the whipped cream icing and some birthday candles with some raspberries. Looked good!
It was tasting the cake that got me a little nervous. It seemed too good to be true but honestly it was delicious, Reminding me a lot of a devils food cake. I was imaging how amazing it would have been with a chocolate ganache but I will save that for next time.
So we are here to ‘Shout it from the Mountain Tops’- Toosie’s Gluten Free is excellent! I have not tried their other products but have heard several people mention their Waffle & Pancake Mix. There are also a ton of recipes on the website that you can try too.
