Meet John Sabal, chef and professional connoisseur of all things gastronomy. He and his wife Mirasol are the proprietors of The Palisade Cafe 11.0. The couple purchased the previous Palisade Cafe 11.0 to meet the needs of both the towns local restaurant go-ers and tourist desires for a restaurant that focuses on preparing and serving the freshest food of and from the region.

     Palisade offers top-notch fruits, vegetables, food products, locally distilled spirits, brewed beer, ciders and of course wine. It just made sense to bring their years of experience in the food and beverage industry together and combine them with the regions bountiful harvest to present to their clientele. The cafe’s menu emphasizes American, Spanish and Peruvian dishes in the restaurant’s comfortable dining space where displays of local artwork grace the interiors walls and locally thrown pottery is used as their serving dishes. They even own an orchard that supplies world-class peaches, apricots, plums, and cherries for their dishes, desserts and cocktail concoctions

     One of John’s proudest dishes on the menu are the authentic Paellas served on Thursdays. John and Marisol are Paella experts, garnered from experiences in travels around the world. It has been said by some that the Palisade Cafe’s Paella compares favorably to Jaleo, José Andrés’ restaurant in Las Vegas. John proudly prepares his dishes with authenticity on a stand, in a flat pan with Spanish bomba rice, Spanish saffron, piquillo peppers, authentic Spanish chorizo and the freshest ingredients available from Palisade.

John Sabal is a humble Paella Chef and Connoisseur

    There is no pretense here, only delicious food consciously created and freshly prepared and served by passionate foodies. Marisol Sabal, John’s wife is of Peruvian and Spanish descent. She learned much from her family and is an excellent cook in her own right. Together John and Marisol have incorporated their experiences and knowledge for an exceptional farm to table experience.
