Cochon555 Heritage Fire
This year the Cochon555 Heritage Fire returns to Base Village in Snowmass on June 16, 2018 with an all-star chef lineup to take guests on a journey of whole animal cookery over live-fires. Helping to foster relationships between local farms and emerging chefs, Heritage Fire serves its guests flavorful food from real farmers, all cooked en plein air against the Rocky Mountain backdrop.
The Cochon555 US Tour executes a yearly host of authentic, hyper-local food events focused on raising awareness for heritage breed pigs through an innovative nose-to-tail pig cooking competition. This epic pork feast visits 15 major cities in North America annually. The tour is comprised of an array of live expressions and cultivates a long-term impact for heritage species. Both educational and inspirational messages are circulated among 16,000 guests; 2,200+ chefs; 150+ family farms; and culinary schools each year. Since 2009, 108,000+ consumers have experienced heritage pork for the first time, more than $1,100,000 has been donated to charities, and over $1,200,000 has been paid directly to their farmers.
Heritage Fire begins right after dawn with three cords of hardwood and enormous piles of cast iron, sheet metal, cement blocks, metal spits, and various cooking grates and ties. The fire-fed feast is led by chefs paired with responsibly-raised animals rubbed head-to-toe with salt, spices and ancestral cooking methods. The list of salt and oil-rubbed options at Heritage Fire include sustainably-raised pigs, lambs, goats, fish, rabbit, duck, chicken, dry-aged beef and locally grown heirloom vegetables. Chefs, farmers, pastry chefs and butchers take a romantic approach to imparting a crispy finish from an arsenal of various live fire formats. Inspired by global food cultures, more than 100 prominent chefs, farmers, sommeliers, distillers, and barkeeps will work in concert to create delicious moments of delight.
Participating chefs at the country’s most epic day-long cookout include Steve Redzikowski of Acorn (Denver), Shota Nakajima of Adana (Seattle), Manabu ‘Hori’ Horiuchi of Kata Robata (Houston), Jean-Philippe Gaston of Izakaya (Houston), Joshua Pollack of Rosenberg’s (Denver), Bill Miner of il Porcellino (Denver), Jim Butchart and Andrew Helsley of Aspen Skiing Co., Hosea Rosenberg and Nate Singer of Blackbelly (Denver), Daniel Asher of River & Woods (Denver), Kelly Whitaker of Basta (Denver), Jason Harrison of Red Maple Catering (Vail), Alberto Figueroa of Viceroy Snowmass, Adam Vero of Hearth & Dram (Denver), Oscar Padilla of Tamayo (Denver), Eddy Chimal of Venga Venga (Snowmass), Will Nolan of Madeline Hotel (Telluride), Kyle Wilkins of Home Team BBQ (Aspen), Peter Jacobsen of Team Toast (Napa), Jason DeBacker of The Edge (Aspen), Linda Hampsten Fox of The Bindery (Denver), Felix Florez of Cherry Block (Houston), Matt Lovelace and Greg Lowry of Bon Appétit (Houston), and to end on a sweet note, Christopher Mosera of AikoPops (Denver) and Rebecca Masson of Fluff Bakery (Houston) will dish up dessert. In addition to the meat-laden feast, the event also features a Pop-Up Butcher Demo and Silent Auction with celebrated butchers Kate Kavanaugh and Josh Curtiss of Western Daughters (Denver). Participating farmers include Jason Smith of Rock Bottom Ranch, Jeff Bauman of McDonald Family Farm, Felix Florez of Black Hill Meats and the teams behind Carter Country Beef, Farm Runners, Shady Acres, Niceland Seafood and Seattle Fish.
Beyond the 100+ chef created dishes, the food is paired with free-flowing wines from boutique producers, stunning spirits, craft beers, and artisan ciders. Guests will also enjoy hand-crafted cocktails and spirit tastings from Breckenridge Distillery,Courvoisier and El Tesoro Tequila, Woodford Reserve,Buffalo Trace, Eagle Rare, Don Q Rum and more. Wine enthusiasts will sip Wines of Rioja, Chateau D’Esclans, Wines of Germany, Antica Napa Valley, Blanchard Family Wines, Azzurro Wine Company, Silver Oak, Kosta Browne, Pax Wine Cellars, Sandhi, and Twomey Cellars.

Feast on responsibly-raised heritage animals cooked over live fires, a perfect setting of ethically sourced food, and a variety of beverages from local craft breweries, distilleries and wineries – all created by some of the nation’s most forward-thinking food and drink leaders.
The Welcome Lounge ushers guests into our Signature Starter Bar and Cheese Experience spotlighting Les Trois Petits Cochons, Yellow Door Creamery, Cello, Savile Row, La Quercia, and Cypress Grove. Sip sparklers from Topo Chico and the Manhattan Project featuring five premium bourbons topped with Luxardo cherries. Learn about cooking fire-crisped pork belly paired with the wines of Antica Napa Valley and experience the racy portfolio of Wines of Germany paired with wood-fired BBQ. Guests will enjoy Royal Oak’s Natural Charcoal “Cookin’ Dirty” showcase of A5 Wagyu cured with Kogi. Guests wanting a sweet bite will enjoy an innovative spin on dessert spotlighting notable pastry chefs working with Perfect Puree of Napa Valley.
Additional programming to Heritage Fire includes Rustic Grind on Thursday June 14th at 6:30pm as part of the Snowmass Free Concert Series. This Heritage Fire preview event features wood-fired grills loaded up with heritage breed sausages prepared by chefs with national acclaim paired with premium wines and hand-crafted cocktails from Breckenridge, El Tesoro Tequila and Courvoisier. Located inside the concert venue, ticketed guests will enjoy unlimited food and drink for $40. Guests may purchase in advance or at the door (please note: Rustic Grind tickets do not include entry into Heritage Fire on Saturday). Every event is a fundraiser for Cochon555’s sister charity, Piggy Bank — a start-up farm in Missouri that serves as a kickstarter for new family farms and a safety net for those in the wake of a disaster (flood, fire and disease).
